Cask to Glass: The Rise of Bespoke Scotch Whisky and Tailored Spirits Co.
For most whisky drinkers, the journey ends when the bottle is opened. But for a growing number of collectors and enthusiasts, the journey is just beginning — selecting casks, shaping maturation, designing the bottle and ultimately creating a whisky that is entirely their own.
In Scotch whisky, there has always been a quiet barrier between the people who drink whisky and the people who shape it. Indeed, behind every bottle lies a hidden world of warehouses, distilleries, private casks, brokers, designers, logistics and long-standing industry relationships — a world that, for most enthusiasts, remains just out of reach.
That’s exactly the space Tailored Spirits Co. was created to open up, and with every innovation of this home-grown brand, a quiet revolution has begun to unfold.
Bottling the unique and unforgettable, the Tailored Spirits Co team
“We see indie brands as a fantastic part of the Scotch whisky world,” says co-founder Adam Harding. “However, it is a corner of the industry that isn't easily accessible to most. There is a mammoth network of distilleries, warehouses, suppliers, producers, traders, logistics providers, expertise and manufacturers that you require access to in order to build a successful independent whisky brand — and that is before you even consider licensing, storage, fulfilment, export, distribution, retail, on-trade and marketing.”
Rather than simply launching another independent bottler, Harding and his team built a company designed to not only give clients access to that world, but also guide them through it.
“Instead of starting a brand and building this entire network and expert in-house team, we asked how we could share this value with more passionate clients around the world. By providing premium access and expert guidance throughout the entirety of the whisky space we can empower more clients to commission their own special Scotch whisky products.”
Much More Than Just Another Bottle
When someone commissions a whisky, what are they really looking for – a drink, an object or an experience? “This is something that is as varied as the whiskies we create,” Harding explains. “Each client has a deeply personal reason to explore commissioning their own whisky project.”
Those clients might be collectors, enthusiasts, private individuals with a connection to Scotland, companies marking a milestone, private clubs creating a members’ bottling, or even new brands looking to enter the market. But while the reasons vary, the underlying motivation is often the same.
“Each client has a deeply personal reason to explore commissioning their own whisky project.”
“The commonality we find across our clients is limited access to expertise and a desire to create something special,” Harding says. “That is where Tailored Spirits Co. comes in: the complete partner to take our clients on a journey through premium whisky and ensure a premium, worry-free and enjoyable experience through the entire process from the cask to the glass.”
That phrase – from the cask to the glass – neatly summarises what the company does best: sourcing whisky, guiding maturation, overseeing design, managing bottling and navigating export. It’s an entire ecosystem of excellence, driven by a desire to bring change to an industry that’s not always been associated with progression or transparency.
The Winding Road From Idea to Bottle
Adam Harding, with dram
The journey usually begins exactly as it should, with a conversation and a dram. “We start with a discovery call or meeting over a dram,” Harding says. “This allows us to have an open conversation to better understand what they are looking to achieve, and an opportunity for us to answer questions, ask plenty ourselves and share a clearer picture of what is possible.”
From there, Tailored Spirits begins sourcing casks through its network of distilleries, warehouses and private collections, while the design team works with clients on the look and identity of the whisky.
“We then produce pre-production samples of all elements to ensure fitments and quality before full production can begin,” Harding explains. “For the bottling day, our clients often fly in to participate and fill the first bottle themselves — it’s always an unforgettable experience.”
It’s a level of involvement that goes far beyond simply selecting a cask. Clients can help shape everything from flavour profile to label design, turning the whisky into something genuinely personal — a product that, quite simply, couldn’t exist without their enthused involvement.
Finding the Right Cask
As every whisky fan knows, everything begins with the cask… but good casks are becoming harder to find. “The key distinction is good quality casks,” Harding says. “Accessing young whisky stock is easier than ever, but seeking out high quality casks or having access to a range of first-fill wood for re-racking is vital for ensuring an exceptional final product.”
For older and rarer whisky, that challenge becomes even greater. “For extra-special whisky like old and rare spirits from closed distilleries — incredibly valuable and irreplaceable cask stocks — we have worked tirelessly to develop an enviable and ever-growing network of direct distillery access, group supply and private collection.”
The company also works with clients who already own casks, sometimes advising them to move the whisky into a different cask to improve the final result. “We can provide guidance to sample the whisky and advise on re-racking where necessary to elevate the final spirit into something special.”
Balancing distillery character with creativity
One of the most fascinating parts of independent bottling is the balance between preserving the character of the original distillery and shaping the whisky through maturation and finishing.
A bespoke process from beginning to end
“The distillate and the distillery have a clearly identifiable character that sets the foundation for any whisky,” Harding explains. “Twenty to thirty percent of this character will be evident in the whisky no matter what cask we mature in. Though the casks and finishes are where we can be creative.”
Once again; creativity in whisky, as it turns out, mostly comes down to wood. “Maturing in a wide variety of oak casks — from French red wine to American white oak ex-bourbon, to ex-Caribbean rum barrels, to European oak cognac butts, to Port, Madeira, Calvados or even Tequila casks — we can tailor a flavour profile as unique as a fingerprint.”
It’s important to note, however, that matching a distillery’s official style exactly is almost impossible, and somewhat at odds with the ethos behind what Tailored Spirits Co are striving for.
“Distilleries employ incredibly talented masters to create their whiskies and ensure consistency of profile across thousands of casks, so matching that exact style with a single cask is near impossible.” The point is, after all, to make something as unique and personalised as the individual tastes of the client – something which couldn’t ever be plucked from the shelves of a bottle shop, or picked up on-site at a distillery tasting room.
Experimentation within the rules
Scotch whisky is famously regulated, but within those rules there is still plenty of room to experiment. This is particularly true when it comes to maturation. “Scotch whisky holds a special reverence in the world. We have guardrails in place that ensure the best quality of spirit, though there is still plenty of space to tinker, to be curious and to experiment,” Harding says.
“Oak casks come in many forms and sizes, which is the first key variable — whether we’re looking at a 500-litre butt or a 35-litre blood tub, the maturation environment for each is entirely unique. With a smaller vessel you can enhance maturation and inject huge amounts of influence in a short window.”
Then comes the type of oak and what was previously stored in the cask. “Typical cask types like ex-bourbon, sherry or port will produce familiar whisky styles, but we explore a new world of character with Cognac, Tequila, Rum, Spanish red wine, French red wine, Calvados and Madeira.”
A quiet revolution underway
Bottlers, storytellers and passionate connectors
When asked whether Tailored Spirits Co sees itself as a bottler, guide or storyteller, Harding’s answer is revealing.
“We see our role as a multitude of those things. First and foremost, we are custodians of the category for the short history that we are part of, so it was very important to us to add genuine value to the industry and to our clients.
Most of our clients see us more as partners. We delve into the depths of understanding what it is we are working together on, using our expertise to tease out storytelling through design — but telling a story that is uniquely personal to each one of our clients. Overall, we see our role as connectors. We build strong connections with our clients and in turn with the incredible partners we have here in Scotland distilling, manufacturing, warehousing and crafting — we share access to that connection.”
Bold innovators in a changing whisky world
So is this private client model a niche luxury, or part of a broader shift in how people want to experience whisky? “I think this remains to be seen,” Harding says. “Ultimately there will always be a luxury end of the market that the fortunate few are able to explore further, as old, rare small batch whisky, by nature, is more expensive to produce.”
Harding also believes that something deeper is changing, too. “When the world is moving at the pace it is and connection is becoming more superficial and transactional, the desire for real authentic connection is much more valued,” he says.
“Connection to a story, to an experience, to a place, to something that not everyone can have in an instant — that requires real human ingenuity and skill, culminating in the ultimate expression of passion and quality on a personal level. That feeling is becoming scarce at the same time as it is becoming sought after.”
The Last Drop
Speaking to Harding, it becomes clear that the whisky itself, while obviously important, is almost the end point rather than the beginning. The real value lies in the journey: the sourcing, the tasting, the designing, the bottling and the story behind it all.
Or, as Harding puts it, while most projects culminate in bottling whisky, “Tailored Spirits Co is so much more than that — it is the embodiment of deep connections, pride in presentation and an opportunity to explore one’s passions for premium Scotch whisky.”
From warehouse to house, from cask to glass, it’s a reminder that whisky is still, at its heart, a human story… and that’s something we’re always going to be ready to raise a glass to.
