Sparrow Hills, Poland Review: Uncovering the Future of Luxury Wellness Retreats

What exactly is luxury? It’s a question I get asked all the time, and it’s one that The Last Concierge considers very carefully indeed. I certainly have my own definition, and it’s centred primarily on access and assurance rather than anything to do with opulence and cost. 

However, few would argue against the idea luxury is an ever-changing, ever-evolving sphere; a realm which consistently strives to outdo its own uppermost efforts, and which can look and feel quite different from one year to the next.

Sparrow Hills: A palace of wellness and relaxation

If we’re to look at the dominant trends in the luxury sector right now, one thing is abundantly clear: the ostentatious glamour of the 2010s has faded away, and there’s a greater emphasis than ever before on a quieter, more introspective approach at play. With wellness, longevity and discretion dominating the scene, the art of ‘living well’ has never been more literal, nor has it ever been taken more seriously. 

It was in pursuit of peerless wellbeing that I found myself arriving at Sparrow Hills, an hour’s drive from Poznan airport in the east of Poland. 

Sparrow Hills: The Future of Wellness Travel in Poland

A phenomenally ambitious project that’s set to bring the most cutting-edge approaches to wellness from the Swiss Alps to a burgeoning luxury sector in Central Europe, Sparrow Hills aims to exceed all expectations in most unexpected ways. To say that it achieves its goals would be a hell of an understatement – this retreat, built around a spectacular 19th century palace amidst hundreds of hectares of gently rolling Polish countryside, feels less like a health resort, and more a glimpse into a bold and fascinating future for the luxury travel sector. 

Opulent interiors, peerless service

Guests at Sparrow Hills are invited to retreat from the hustle and bustle of everyday life in truly spectacular and groundbreaking fashion. The palace itself is pristine; nine vast suites are spread across three accessible floors, each bedecked with period furnishings and flourishes of often eccentric contemporary art. There are high-ceilinged rooms dedicated to various meditative exercises. There’s a stunning communal dining room, where head chef Bartosz serves dishes that combine delicious Polish ingredients with classical techniques in inventive, mouthwatering fashion. There’s a private bar and cigar lounge, a library, a study, an orangery and ornamental gardens – it’s not hard to see why it’s a popular destination for family getaways, weddings and corporate events, as every corner has been meticulously envisioned to ensure the utmost in immersive relaxation. 

So far, so elegant – in very much an ‘old world’ vein. Where Sparrow Hills rockets itself to the forefront of trending and future-forward luxury travel is in the opportunities that the talented team present to their guests, some of which were familiar to me, others of which I was thrilled to uncover for the very first time. 

Resetting and Relaxing in a Beautiful Setting

A place to reset in style

The first morning at Sparrow Hills began relatively early – a seven a.m wake up call brought me and my companions to the sun-drenched wellness centre on the third floor. Soft carpeting underfoot and a vivid mural of tropical birdlife once again asserted the gleefully eccentric design aesthetic; a constant happy reminder that, while in this corner of Poland, you’re a long way from the daily grind. Our journey into wellbeing was kicked off with a light yoga session – nothing particularly taxing, but I’m always happy to be reminded that, sometimes, this is exactly what my body needs and exactly how I want to begin my days.

The yoga instructor recognised that four sleepy travel professionals weren’t necessarily her regular crowd of students, but there was nothing awkward, nothing uncomfortable and nothing inaccessible about the session. Indeed, Sparrow Hills USP can be understood in many different ways (as we’re about to discover), but central to my experience there was the people the estate employs – every practitioner, every teacher, every member of household staff pitched their offerings perfectly and seamlessly. It was a truly impressive aspect of the whole trip, and a potent reminder that the answer to the question “what is luxury” can so often be found in the impassioned human resources at its heart. 

Diving Into Within: The Ultimate Darkness Project

Following a particularly sumptuous breakfast (featuring many ingredients grown on-site, ensuring the ultimate in freshness and flavour), we were invited to dive into Sparrow Hills’ plans for the next three to five years. 

It’s, again, no exaggeration to say that what the team has in mind is beyond ambitious – the vision is to transform the site into a boldly futuristic wellness retreat the likes of which this part of Europe has never seen. Sweeping, ultra-modern white pre-fab constructions – somewhere between Le Corbusier and Stanley Kubrick – will work in contrast and harmony with the historic farmhouse buildings and the palace itself, providing additional accommodation for those seeking to explore the latest in longevity treatments and practices. Green space will be maximised to ensure utmost immersion in the natural landscape, a large fine dining restaurant will be forged from a barn, and a space has been reserved to welcome light aircraft and private jets from across the country and further afield. 

The darkness cabins of Within: The Ultimate Darkness Retreat

It’s a vast, remarkable project, and one that’s driven by Sparrow Hills’ other principal offering – Within: The Ultimate Darkness Retreat. 

Look out from the dining room of the genteel palace, and you’ll see five grassy mounds situated at the end of a kilometre-long winding pathway. These are the darkness retreats; underground rooms created for a wellness experience quite unlike any other. Guests enter the rooms, the door is closed, and they’re plunged into an inky, absolute and all-enveloping night-time for up to four days at a time. This is the ultimate manifestation of sensory deprivation treatment; an approach to meditative wellbeing and yogic practice that’s backed by millennia of wisdom, and one said to have genuinely life-changing effects. To spend so long cloaked in darkness, away from any concept of the passage of time or any outside noise, it allows visitors to plunge into a meditative state that produces an array of transformations – as well as what have been described as vivid, blissful visions and feelings of profound love and self-realisation.

Curved surfaces, soft floors and simple amenities – a simple bathroom, a warm bed and meals delivered through an airlock-like hatch to ensure no interruption to the absence of light – gradually become part of a familiar rhythm. I was invited into the dark for thirty minutes that felt like five; I’d be fascinated to see how long I could last as an active participant, and just how much of an impact the experience might have on my life. 

So far, Within: The Ultimate Darkness Retreat has been a hit and there are plans in place to double the number of underground rooms, so I suspect there’s really something in those seemingly outlandish claims. 

Outside in the bright, sunny Polish spring air – blinking in the light after such a relatively short stint without it – we headed to the nearby lake; a beautiful spot where guests to Sparrow Hills can indulge in various water activities, including swimming, kayaking and jetskiing. It’s a fabulous amenity to have at-hand, and I was delighted to simply sit on its still-frosty shoreline and enjoy a silky cup of cauliflower and truffle soup, a plate of pearlescent black cod (I’ve eaten a remarkable amount of black cod this year, yet this hunk of white fish cooked simply on an outdoor grill, might genuinely have been the best yet) and sip Champagne. These people certainly know how to live. 

Uncovering the Impact of Breathwork and Ice Baths

The evening was given over to another wellness activity of which I’ve only had limited exposure to: a sound healing session, overseen by Paula, a local practitioner who guided the group into an hour of deep relaxation and rejuvenation brought about by the steady vibrations of variously-sized struck bowls. On the surface, it feels a little silly – again, a group of men in jeans, lying on the floor while ringing bowls are placed on one’s chest. In reality, it really worked: Paula’s ability to soothe and the permission to simply lie back, rest and feel safe, warm and calm was, quite frankly, a beautiful experience. I’ve already googled sessions back home in Bristol, and I’ll be seeking out further opportunities for this encounter soon. 

Breathwork with Krystof

Following an incredibly restful sleep (bolstered in part by the sound healing, but admittedly also by a few glasses of exceptional whisky and Armenian cognac in the private bar), we headed upstairs once again at daybreak for another wellness session – the first one I was genuinely quite apprehensive about. 

The Wim Hof Method – championed by the eponymous Dutch self-styled ‘ice man’ – has been a much-discussed approach to wellness over the past few years. I first came across Wim, like many others, via Gwyneth Paltrow’s Netflix series a decade or so ago, and he’s gone somewhat stratospheric ever since. The method itself is based on a much older concept of ‘breathwork’ – a practice of deep and measured breathing, hyperventilation and powerful exhalations, allowing the body to regulate the nervous system and overcome all manner of anxieties and pain. This is demonstrated, in rather spectacular fashion, by Wim and his students plunging themselves into icy waters and spending extended periods of time in sub-zero surroundings, using nothing but their breath to overcome the cold. 

Breathwork instructor Krystof Jakubiak – a charismatic and hugely affable individual, who stepped away from a high-flying corporate career to help guide others in the method – led the group through an hour of breathing exercises, which ranged from the gentle and soothing to a crescendo which left us, in Wim Hof’s words, “high on our own supply”. Once again, my cynicism had evaporated; this was truly effective stuff, and a profound reminder that our breath has the power to significantly alter our mood and feelings of wellbeing and strength. 

We were led, one by one, to a large plunge bath filled with ice and showing just under two degrees centigrade on the thermometer. We lowered ourselves in, remembered our training on controlling our breath and exhaling fully, and spent two minutes amid the ice. 

Incredibly, there was no pain. The shock of the cold registered and left us gasping for a couple of seconds, but the training really worked – every one of us regulated the rhythm of our lungs and relaxed into the experience. It was, in a word, amazing. Once again, I’ll be looking into doing this again, which is (as a man who struggles to get into my local swimming pool unless it’s a particularly hot day) something I never thought I’d say. 

Krystof, just like every other team member we met during our stay at Sparrow Hills, had made a challenging encounter feel like the most natural, enjoyable thing in the world – a real testament to the operation’s commitment to bringing their guests in contact with the very best available.

Sparrow Hills, Poland: Luxury Taken to Bold New Heights

Our small coterie positively skipped down the stairs to our final breakfast (a plethora of delights, most notably the chicory leaves topped with green apple, artichoke crisps and black garlic emulsion) and coffee diligently served by our exceptionally attentive butler. A quick trip to the sauna was followed by a series of heartfelt goodbyes, and then the road back to Poznan stretched before us.

People often think that the life of a travel journalist is a relaxing one. This is rarely the case – itineraries tend to be packed, days tend to be incredibly long. I rarely come home feeling refreshed, let alone that I’ve been on holiday. It’s now been three days since I headed back to Bristol from Sparrow Hills, and I still detect a feeling of laid-back bliss; the after-effects of peerless hospitality deepened by breathwork, gongs and opportunities to connect. It was, in essence, an opportunity to reset with the help of truly incredible people, each passionate and committed to what they do best.

That, right there, is luxury.
